Lemon possett

Delicious and so simple to make. The perfect dessert to make when you’ve got guests coming as it can be made in advance and chilling in the fridge ready.

600ml Double cream
150g Caster sugar
2 Large lemons, juice and zest

Serves 6

1 Put sugar and cream in a pan and bring to the boil slowly
2 Boil for 3 mins
3 Allow to cool
4 Whisk in lemon juice and zest
5 Pour into serving glasses
6 Chill for 3 hours

Serve with shortbread
